Reims needs 1 day: touring Notre-Dame de Reims Cathedral, where 33 French kings were crowned between 1027 and 1825, and visiting one of the underground champagne cellars carved into ancient Roman chalk quarries, the same afternoon. April-June and September-October bring the mildest weather. It's mid-to-upper priced given its association with champagne. Its Gothic cathedral, badly damaged by German shelling in World War I and rebuilt with Rockefeller family funding, is where Joan of Arc had Charles VII crowned in 1429, and its underground cellars hold hundreds of kilometers of galleries with millions of bottles aging underground.
