Gruyères needs 1 day: walking its single cobblestone street up to the medieval castle at the top on one, and visiting the La Maison du Gruyère cheese factory, with demonstrations of the artisanal process, next to the town. May-September is best. It's mid-to-high priced, very popular as a day trip. It gives its name to one of the world's most exported cheeses, with protected designation of origin since the 12th century, and its medieval castle, practically intact since then, crowns a single-street town that remains car-free and practically frozen in time.
